Olivier Caillabet, the chef and partner at Toki Underground, shares his diverse background, which includes growing up working in a French restaurant in Ireland, earning degrees in zoology and primate conservation, and working for a non-profit investigating wildlife trade in Southeast Asia. He discusses how his international perspective has influenced his approach to cooking and creating culinary creations.
Christophe Richard, an interior designer who partners with chefs and hospitality groups to create unique dining experiences, shares his journey from being raised in restaurants to pursuing a Master’s degree in Interior Design while working for Thomas Keller in NYC. He also shares his insights on what he believes are necessary elements to create an exceptional hospitality experience.
Both Olivier and Christophe delve into what inspired the menu at Toki Underground, and how they work together to create an exceptional dining experience. They also touch on the power of breaking bread and sharing a meal, and how food and art can influence the way we view the world.
Lastly, they discuss what’s next for them, including their upcoming project in Baltimore’s Waverly/Harwood, and how listeners can follow their work.
